Groundnut (Apios americana) Plant or Tubers
1 plant, usually several tubers and vines, when totally dormant tubers only.
3 tubers, 3 small viable tubers.
This native nitrogen fixing vine produces high-protein tubers and beautiful edible flowers. They prefer sunny damp sites, like their home habitat of river banks, but are widely adaptable. This species spreads by rhizome, especially in favorable growing conditions. While quite spready, they don’t tend to choke out surrounding plants… however they are probably better suited to meadow, forest garden or other naturalized plantings than a veggie garden. Larger tubers tend to develop if left with minimal disturbance for 2-3 years.
I have a podcast episode on this plant with Zach Elfers, if you want a deep dive.
